Ingredients

- 1 lb boneless chicken (breast or thighs)
- 4 cups chicken broth
- 1 cup heavy cream or Greek yogurt
- 3 cloves garlic, minced
- 1 sweet yellow onion, diced
- 2 fresh lemons (juice and zest)
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cups fresh spinach (optional)
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, add a drizzle of olive oil. Sauté chopped onion and garlic until fragrant and translucent.
- Add diced chicken and cook until lightly browned on all sides.
- Incorporate chopped carrots and celery; sauté for a few more minutes until tender.
- Pour in chicken broth, scraping up bits from the pot for added flavor.
- Bring to a gentle boil, then reduce heat to simmer. Add freshly squeezed lemon juice and zest.
- After about 20 minutes, stir in cream (or Greek yogurt), adding slowly to avoid curdling.
- Mix in chopped herbs before serving for a fresh burst of flavor.
- Season with salt and pepper; garnish with parsley and serve warm with crusty bread.
Notes
Allow plenty of time for flavors to blend and don’t rush the simmering process. Add cream at the end to avoid curdling.
