- 2 cups fresh spinach
- 2 cups ripe tomatoes (or canned diced tomatoes)
- 1 cup heavy cream (or plant-based cream)
- 2 cloves minced garlic
- 1 small onion, chopped
- 1/2 cup freshly grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Sauté the vegetables: Heat olive oil in a large pot, add onions, and sauté until translucent (3-4 minutes). Add garlic and sauté for another minute.
- Add the tomatoes: Toss in chopped fresh tomatoes and cook down for about 5 minutes.
- Cook the pasta: Add uncooked pasta, stir, and pour in broth to cover (about 2 cups). Bring to a gentle boil, then reduce to a simmer.
- Incorporate the spinach and cream: Stir in fresh spinach and heavy cream, and simmer until spinach wilts and sauce thickens.
- Finish with cheese and herbs: Remove from heat, stir in cheese, and season with salt and pepper. Garnish with fresh basil before serving.
