  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon olive oil

Instructions

  1. Sauté the vegetables: Heat olive oil in a large pot, add onions, and sauté until translucent (3-4 minutes). Add garlic and sauté for another minute.
  2. Add the tomatoes: Toss in chopped fresh tomatoes and cook down for about 5 minutes.
  3. Cook the pasta: Add uncooked pasta, stir, and pour in broth to cover (about 2 cups). Bring to a gentle boil, then reduce to a simmer.
  4. Incorporate the spinach and cream: Stir in fresh spinach and heavy cream, and simmer until spinach wilts and sauce thickens.
