  • 3 cups fresh spinach
  • 2 cups sliced mushrooms
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 4 tablespoons butter
  • 3 tablespoons flour
  • 2 cups whole milk
  • 2 cloves garlic, minced
  • 1 onion, diced
  • Salt and pepper to taste
  • Fresh herbs (basil or parsley)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the filling: In a large skillet, melt butter, add garlic and onion, sauté until fragrant. Add mushrooms and cook until browned, then stir in spinach and season.
  3. Make the béchamel sauce: In a saucepan, melt butter, whisk in flour, then gradually add milk, stirring until thickened. Season with salt and pepper.
  4. Spread a layer of béchamel sauce in a baking dish, place a layer of noodles, half of the filling, dollops of ricotta, mozzarella, and Parmesan. Repeat layers, ending with béchamel and cheese.
  5. Bake covered with foil for 25-30 minutes, then uncover and bake for an additional 15-20 minutes until golden.
  6. Rest for 10 minutes before slicing to serve.
