- 12 lasagna noodles
- 3 cups fresh spinach
- 2 cups sliced mushrooms
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 4 tablespoons butter
- 3 tablespoons flour
- 2 cups whole milk
- 2 cloves garlic, minced
- 1 onion, diced
- Salt and pepper to taste
- Fresh herbs (basil or parsley)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the filling: In a large skillet, melt butter, add garlic and onion, sauté until fragrant. Add mushrooms and cook until browned, then stir in spinach and season.
- Make the béchamel sauce: In a saucepan, melt butter, whisk in flour, then gradually add milk, stirring until thickened. Season with salt and pepper.
- Spread a layer of béchamel sauce in a baking dish, place a layer of noodles, half of the filling, dollops of ricotta, mozzarella, and Parmesan. Repeat layers, ending with béchamel and cheese.
- Bake covered with foil for 25-30 minutes, then uncover and bake for an additional 15-20 minutes until golden.
- Rest for 10 minutes before slicing to serve.
