  • 2 cans butter beans, rinsed and drained
  • 3 cloves fresh garlic, minced
  • 8 oz cremini or shiitake mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 1 medium yellow onion, chopped
  • 2 tbsp olive oil
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse and drain the butter beans if using canned. Chop your onion, mince the garlic, and slice the mushrooms.
  2. In a large skillet, heat olive oil over medium heat. Add the onions and sauté until translucent, about 3-4 minutes. Add garlic and mushrooms, cooking until mushrooms soften, about 5-7 minutes.
  3. Pour in the white wine, scraping the bottom of the pan. Simmer for a few minutes until slightly reduced.
  4. Stir in the heavy cream and introduce the butter beans gently. Let simmer for about 10 minutes for flavors to meld.
  5. Add fresh herbs, salt, and pepper to taste. Optionally, add a squeeze of lemon juice for brightness.
  6. Ladle the creamy butter beans into bowls and garnish with extra parsley, if desired.
