- 2 cans butter beans, rinsed and drained
- 3 cloves fresh garlic, minced
- 8 oz cremini or shiitake mushrooms, sliced
- 1 cup heavy cream
- 1/2 cup dry white wine
- 1 medium yellow onion, chopped
- 2 tbsp olive oil
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse and drain the butter beans if using canned. Chop your onion, mince the garlic, and slice the mushrooms.
- In a large skillet, heat olive oil over medium heat. Add the onions and sauté until translucent, about 3-4 minutes. Add garlic and mushrooms, cooking until mushrooms soften, about 5-7 minutes.
- Pour in the white wine, scraping the bottom of the pan. Simmer for a few minutes until slightly reduced.
- Stir in the heavy cream and introduce the butter beans gently. Let simmer for about 10 minutes for flavors to meld.
- Add fresh herbs, salt, and pepper to taste. Optionally, add a squeeze of lemon juice for brightness.
- Ladle the creamy butter beans into bowls and garnish with extra parsley, if desired.

Stir gently to avoid breaking the beans. Taste and adjust seasoning as needed.
