- 1 cup Dill pickle brine
- 1 cup Freshly grated Parmesan cheese
- 1 cup Italian-style breadcrumbs
- 1/2 cup All-purpose flour
- 2 Eggs
- 1 tsp Garlic powder
- Salt & pepper to taste
- Optional: Cayenne pepper for heat
- Cooking oil for frying
Instructions
- Marinate the chicken in dill pickle brine for at least an hour, or overnight.
- Prepare three bowls: one with flour mixed with salt, pepper, and garlic powder; one with whisked eggs; and the third with breadcrumbs and Parmesan.
- Coat each chicken piece in the flour mixture, then dip in the egg, and finally coat with the breadcrumb mixture, pressing firmly.
- Fry in hot oil over medium-high heat for 3-5 minutes per side until golden brown and cooked through, ensuring the internal temperature reaches 165°F.
- Drain on paper towels and serve warm with pickles or a dipping sauce.
Notes
For extra crunch, double-dip the chicken in breadcrumbs. Always pat the chicken dry before marinating for better seasoning penetration.
