Ingredients

  • 1 cup Dill pickle brine
  • 1 cup Freshly grated Parmesan cheese
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup All-purpose flour
  • 2 Eggs
  • 1 tsp Garlic powder
  • Salt & pepper to taste
  • Optional: Cayenne pepper for heat
  • Cooking oil for frying

Instructions

  1. Marinate the chicken in dill pickle brine for at least an hour, or overnight.
  2. Prepare three bowls: one with flour mixed with salt, pepper, and garlic powder; one with whisked eggs; and the third with breadcrumbs and Parmesan.
  3. Coat each chicken piece in the flour mixture, then dip in the egg, and finally coat with the breadcrumb mixture, pressing firmly.
  4. Fry in hot oil over medium-high heat for 3-5 minutes per side until golden brown and cooked through, ensuring the internal temperature reaches 165°F.
  5. Drain on paper towels and serve warm with pickles or a dipping sauce.

Notes

For extra crunch, double-dip the chicken in breadcrumbs. Always pat the chicken dry before marinating for better seasoning penetration.
