- 2 large onions (yellow or sweet)
- 1 cup almond flour
- 1/4 cup nutritional yeast
- 2 large eggs
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Peel the onions and slice them into thick rings, about ½ inch thick.
- In a shallow bowl, whisk together the eggs until frothy.
- In another bowl, combine the almond flour, nutritional yeast, paprika, garlic powder, salt, and pepper.
- Dip each onion ring into the egg wash, ensuring it’s fully coated, then dredge it in the almond flour mixture.
- Place the coated onion rings onto the prepared baking sheet, making sure they do not touch.
- Bake for about 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the oven, let cool for a few minutes, and serve with your favorite dipping sauce.
Notes
For an extra crunchy texture, consider frying them in a skillet with coconut oil before baking.
