Ingredients

- 2 cod fillets
- 1 cup panko breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon dried oregano (or preferred herbs)
- Lemon wedges for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare a baking sheet with parchment paper or grease with butter.
- Mix panko breadcrumbs, Parmesan, minced garlic, salt, and pepper in a bowl.
- Pat cod fillets dry with a paper towel.
- Brush melted butter over the cod fillets.
- Sprinkle the panko mixture generously over the fish, pressing gently.
- Bake for 12-15 minutes until the cod flakes easily.
- Let rest a few minutes and serve with lemon juice.
Notes
For extra crunch, broil for a minute at the end. Pair with fresh salad or roasted vegetables.
