Ingredients

  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried oregano (or preferred herbs)
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a baking sheet with parchment paper or grease with butter.
  3. Mix panko breadcrumbs, Parmesan, minced garlic, salt, and pepper in a bowl.
  4. Pat cod fillets dry with a paper towel.
  5. Brush melted butter over the cod fillets.
  6. Sprinkle the panko mixture generously over the fish, pressing gently.
  7. Bake for 12-15 minutes until the cod flakes easily.
  8. Let rest a few minutes and serve with lemon juice.
