  • 2 cloves garlic, minced
  • 1 tablespoon lemon zest
  • 1/4 cup fresh herbs (dill, parsley, basil, or thyme)
  • 1/4 cup olive oil or melted butter
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking tray with parchment paper.
  3. In a mixing bowl, combine panko breadcrumbs, Parmesan, garlic, lemon zest, and herbs.
  4. Drizzle oil or melted butter over the mixture and mix until the crumbs are slightly damp.
  5. Season the cod fillets with salt and pepper.
  6. Place the fillets on the lined tray and spoon the panko mixture over the top, pressing down gently.
  7. Bake for 12-15 minutes or until cooked through and golden brown.
  8. Let the cod rest for a couple of minutes before serving.
