Description
A comforting and creamy soup made with potatoes, broccoli, and aged cheddar cheese, perfect for chilly evenings.
Ingredients
Scale
- 2 cups potatoes, peeled and diced
- 2 cups broccoli florets
- 1 cup sharp cheddar cheese, shredded
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup cream (half and half or heavy cream)
- Herbs (fresh thyme or parsley)
Instructions
- Prep Your Veggies: Start by peeling and dicing the potatoes into bite-sized pieces and chopping the broccoli into florets.
- Sauté Aromatics: For an incredible depth of flavor, briefly sauté the onions and garlic in a skillet until they’re translucent before adding to the crockpot.
- Combine Ingredients: Toss your potatoes, broccoli, sautéed onions and garlic, and broth into the crockpot. Stir in optional spices like black pepper, nutmeg, and fresh herbs.
- Set the Crockpot: Cook on low for 360 minutes (6-8 hours) or high for 240 minutes (3-4 hours).
- Incorporate Cheese and Cream: About 30 minutes before serving, stir in your cheese and cream. Taste and adjust seasoning if needed!
- Serve Hot: Ladle into bowls, topping with additional cheese, fresh herbs, or crispy bacon bits if desired.
Notes
This soup can be frozen before adding cheese and cream for best quality.
