Ingredients

- 2 lbs boneless chicken (breasts or thighs)
- 1 cup salsa verde
- 1 onion, chopped
- 4 cloves garlic, minced

- 1 tsp oregano
- 1–2 bell peppers, chopped

Instructions
- Prepare the ingredients by chopping the onions, mincing the garlic, and setting the chicken aside.
- Layer the chopped onions and garlic at the bottom of the Crockpot.
- Place the chicken on top, seasoning it with cumin, oregano, salt, and pepper.
- Pour the salsa verde over the chicken, ensuring it is well-coated.
- Add the chopped bell peppers, if using.
- Cover the Crockpot and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken in the Crockpot using two forks once done.
Notes
For a vegetarian twist, substitute chicken with firm tofu. Adjust spice levels by adding different peppers or spices.
