A rich and airy dark chocolate mousse cake that delights with every bite, perfect for any occasion.

- 8 oz (225g) high-quality dark chocolate (70% cocoa)
- 4 large eggs, separated
- 1/2 cup (100g) granulated sugar
- 1/2 cup (115g) unsalted butter
- 1 cup (240ml) heavy cream
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C), and prepare an 8-inch round cake pan by greasing it with butter and lining the base with parchment paper.
- Melt the dark chocolate and butter together in a microwave-safe bowl or double boiler until smooth, then allow it to cool slightly.
- Whisk the egg yolks and half the sugar in a mixing bowl until pale and fluffy. Stir in the melted chocolate mixture and vanilla extract.
- Whip the egg whites in a separate bowl until soft peaks form, then gradually add the remaining sugar, continuing to whip until stiff peaks are achieved.
- Fold one-third of the egg whites into the chocolate mixture to lighten it, then gently fold in the remaining egg whites.
- Pour the batter into the prepared cake pan and bake for about 25-30 minutes, until set around the edges but soft in the center.
- Cool the cake in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Whip the heavy cream and spread it over the cooled cake or serve it alongside.
Notes
For a lighter version, substitute heavy cream with half-and-half. You can also infuse the mousse with orange zest or espresso for added flavor.
