Ingredients

  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 8 oz dark chocolate (at least 70% cocoa)
  • 1 ½ cups heavy cream
  • 3 large eggs, separated
  • 1 tsp peppermint extract
  • ¼ cup powdered sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine crushed graham crackers with melted butter and sugar in a bowl.
  3. Press the mixture into the bottom of a tart pan to form an even layer.
  4. Bake for about 10 minutes until golden, then let cool completely.
  5. Melting your dark chocolate in a double boiler or microwave until smooth, then let cool slightly.
  6. Whip heavy cream in a separate bowl until stiff peaks form.
  7. Beat egg yolks with sugar until pale. Gradually fold in melted chocolate and peppermint extract.
  8. Fold in whipped cream carefully to avoid deflating.
  9. Whip egg whites until peaks form and gently fold into the mixture.
  10. Pour the mousse into the cooled crust and smooth the top.
  11. Refrigerate for at least 4 hours or overnight to set completely.
  12. Slice and serve with whipped cream and chocolate shavings.
