- 8 oz dark chocolate (at least 70% cocoa)
- 1 ½ cups heavy cream
- 3 large eggs, separated

- ¼ cup powdered sugar (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine crushed graham crackers with melted butter and sugar in a bowl.
- Press the mixture into the bottom of a tart pan to form an even layer.
- Bake for about 10 minutes until golden, then let cool completely.
- Melting your dark chocolate in a double boiler or microwave until smooth, then let cool slightly.
- Whip heavy cream in a separate bowl until stiff peaks form.
- Beat egg yolks with sugar until pale. Gradually fold in melted chocolate and peppermint extract.
- Fold in whipped cream carefully to avoid deflating.
- Whip egg whites until peaks form and gently fold into the mixture.
- Pour the mousse into the cooled crust and smooth the top.
- Refrigerate for at least 4 hours or overnight to set completely.
- Slice and serve with whipped cream and chocolate shavings.
