Instructions

  1. Prepare the Dark Chocolate: Melt the dark chocolate and butter together in a heatproof bowl over simmering water or in the microwave. Stir until smooth and set aside to cool slightly.
  2. Make the Mousse: Whip the heavy cream until bubbly, adding sugar until stiff peaks form. In another bowl, beat the eggs, adding vanilla, then mix the melted chocolate into the egg mixture until combined.
  3. Fold the Ingredients: Gently fold the whipped cream into the chocolate mixture, taking care not to deflate the whipped cream.
  4. Layer with Raspberries: Fold in a handful of fresh raspberries gently for color and flavor.
  5. Chill and Assemble: Pour the mousse into a prepared cake pan lined with parchment paper. Chill in the fridge for at least 240 minutes.
  6. Serve: Once set, remove from the pan, slice, and serve with extra berries or whipped cream.
