- 1 ½ cups graham cracker crumbs
- ¼ cup sugar (for crust)
- ½ cup unsalted butter (for crust)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a mixing bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, blend the sugar, oil, eggs, buttermilk, vanilla, and food coloring until smooth.
- Gradually add the dry ingredients to the wet mix and stir until just combined.
- Pour the red velvet batter into the prepared pan and bake for 25-30 minutes, until a toothpick comes out clean. Cool completely on a wire rack.
- While the cake cools, beat the cream cheese and sugar together until smooth. Add the sour cream and vanilla, mixing until combined, then gradually add the eggs.
- Once cooled, pour the cheesecake mixture over the red velvet base.
- Lower the oven temperature to 325°F (160°C) and bake for 45-50 minutes, until the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an hour to cool slowly, then refrigerate for at least 4 hours or overnight.
- Serve with whipped cream, chocolate shavings, or festive cranberries.
Notes
Allow the cheesecake to chill for at least 4 hours, preferably overnight. Use room temperature ingredients to avoid lumps.
