  • ¾ cup granulated sugar (for cheesecake)
  • ½ cup sour cream
  • 2 large eggs (for cheesecake)
  • 1 teaspoon vanilla extract (for cheesecake)
  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar (for crust)
  • ½ cup unsalted butter (for crust)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a mixing bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, blend the sugar, oil, eggs, buttermilk, vanilla, and food coloring until smooth.
  4. Gradually add the dry ingredients to the wet mix and stir until just combined.
  5. Pour the red velvet batter into the prepared pan and bake for 25-30 minutes, until a toothpick comes out clean. Cool completely on a wire rack.
  6. While the cake cools, beat the cream cheese and sugar together until smooth. Add the sour cream and vanilla, mixing until combined, then gradually add the eggs.
  7. Once cooled, pour the cheesecake mixture over the red velvet base.
  8. Lower the oven temperature to 325°F (160°C) and bake for 45-50 minutes, until the center is slightly jiggly.
  9. Turn off the oven and leave the cheesecake inside for an hour to cool slowly, then refrigerate for at least 4 hours or overnight.
  10. Serve with whipped cream, chocolate shavings, or festive cranberries.

Allow the cheesecake to chill for at least 4 hours, preferably overnight. Use room temperature ingredients to avoid lumps.
