- 8 oz Fusilli or rotini pasta
- 2 boneless chicken breasts or thighs
- 4 cups Romaine lettuce, chopped
- 1/2 cup Caesar dressing
- 1/2 cup freshly grated Parmesan cheese
- 2 cloves fresh garlic, minced
- 2 tbsp olive oil
- Salt and black pepper to taste
- Optional toppings: croutons or extra Parmesan for serving
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Heat olive oil in a skillet over medium-high heat.
- Add diced chicken seasoned with salt and pepper. Sauté until golden brown and cooked through, about 7-10 minutes.
- Wash and chop the Romaine lettuce into bite-sized pieces and place it in a large mixing bowl.
- Cool the chicken for a few minutes before adding it to the bowl with the lettuce.
- Include the cooked pasta and pour in the Caesar dressing, tossing gently until well-coated.
- Add Parmesan cheese and toss again. Add croutons if desired.
- Serve immediately or chill in the fridge for about 30 minutes.
