  • 8 oz Fusilli or rotini pasta
  • 2 boneless chicken breasts or thighs
  • 4 cups Romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Optional toppings: croutons or extra Parmesan for serving

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add diced chicken seasoned with salt and pepper. Sauté until golden brown and cooked through, about 7-10 minutes.
  4. Wash and chop the Romaine lettuce into bite-sized pieces and place it in a large mixing bowl.
  5. Cool the chicken for a few minutes before adding it to the bowl with the lettuce.
  6. Include the cooked pasta and pour in the Caesar dressing, tossing gently until well-coated.
  7. Add Parmesan cheese and toss again. Add croutons if desired.
  8. Serve immediately or chill in the fridge for about 30 minutes.
