- 2 pounds Yukon Gold potatoes
- 1 cup crumbled feta cheese
- 3 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh dill or parsley, chopped
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions
- Boil the potatoes: Wash the Yukon Gold potatoes, place them in a pot, cover with water, add salt, and bring to a boil. Cook until fork-tender, about 15-20 minutes.
- Prep while boiling: Finely chop the garlic and fresh herbs. Crumble the feta into a bowl.
- Drain and smash: Once tender, drain the potatoes and return them to the pot. Smash gently with a fork, keeping some chunks.
- Add ingredients: Drizzle olive oil, add garlic and feta. Mix gently, keeping the feta crumbly.
- Season and finish: Squeeze in lemon juice, add herbs, and season with salt and pepper. Stir to combine.
- Serve: Transfer to a dish, top with extra feta and herbs, and serve immediately.
Notes
For even cooking, choose potatoes that are similar in size. You can roast the garlic beforehand for a sweeter flavor.
