A quick and heartwarming side dish featuring fluffy Yukon Gold potatoes smashed with creamy feta, garlic, and fresh herbs, all brightened by a squeeze of lemon.


Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 cup crumbled feta cheese
  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh dill or parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Boil the potatoes: Wash the Yukon Gold potatoes, place them in a pot, cover with water, add salt, and bring to a boil. Cook until fork-tender, about 15-20 minutes.
  2. Prep while boiling: Finely chop the garlic and fresh herbs. Crumble the feta into a bowl.
  3. Drain and smash: Once tender, drain the potatoes and return them to the pot. Smash gently with a fork, keeping some chunks.
  4. Add ingredients: Drizzle olive oil, add garlic and feta. Mix gently, keeping the feta crumbly.
  5. Season and finish: Squeeze in lemon juice, add herbs, and season with salt and pepper. Stir to combine.
  6. Serve: Transfer to a dish, top with extra feta and herbs, and serve immediately.

Notes

For even cooking, choose potatoes that are similar in size. You can roast the garlic beforehand for a sweeter flavor.
