Ingredients

  • 34 cloves fresh garlic, minced
  • 2 tablespoons olive oil
  • 8 ounces mushrooms, sliced (cremini, button, or shiitake)

  • Red pepper flakes, to taste
  • Freshly grated Parmesan cheese
  • Salt, to taste

Instructions

  1. Boil a large pot of salted water and cook rotini pasta until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add sliced mushrooms and cook until golden brown.
  4. Combine drained pasta with sautéed mushrooms, reserved pasta water, and fresh herbs. Mix well.
  5. Add red pepper flakes and Parmesan cheese, stirring until the cheese melts.
  6. Serve hot, garnished with additional herbs and cheese.
