- 12 ounces rotini pasta
- 3–4 cloves fresh garlic, minced
- 2 tablespoons olive oil
- 8 ounces mushrooms, sliced (cremini, button, or shiitake)

- Freshly grated Parmesan cheese
- Salt, to taste
Instructions
- Boil a large pot of salted water and cook rotini pasta until al dente. Reserve ½ cup of pasta water before draining.
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add sliced mushrooms and cook until golden brown.
- Combine drained pasta with sautéed mushrooms, reserved pasta water, and fresh herbs. Mix well.
- Add red pepper flakes and Parmesan cheese, stirring until the cheese melts.
- Serve hot, garnished with additional herbs and cheese.
