Instructions
- Preheat your oven to 425°F (220°C).
- Wash and slice the vegetables: halve the Brussels sprouts and cut the carrots into even-sized sticks.
- In a large bowl, combine the carrots and Brussels sprouts. Drizzle them with olive oil, maple syrup, salt, and pepper. Toss until evenly coated.
- Spread the glazed vegetables on a baking sheet lined with parchment paper, making sure they are in a single layer.
- Roast for 25-30 minutes, or until caramelized and tender, tossing halfway through for even cooking.
- Sprinkle fresh thyme or rosemary over the top before serving.
Notes
