Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Sear the ribs in a large Dutch oven with olive oil until browned on all sides.
  3. Sauté chopped onions, carrots, and garlic until softened and fragrant.
  4. Add wine, scraping up browned bits, and let it reduce by half.
  5. Combine tomatoes, beef broth, and herbs, then return ribs to the pot.
  6. Braise in the oven covered for 2.5 to 3 hours, until tender.
