Instructions
- Preheat your oven to 325°F (165°C).
- Sear the ribs in a large Dutch oven with olive oil until browned on all sides.
- Sauté chopped onions, carrots, and garlic until softened and fragrant.
- Add wine, scraping up browned bits, and let it reduce by half.
- Combine tomatoes, beef broth, and herbs, then return ribs to the pot.
- Braise in the oven covered for 2.5 to 3 hours, until tender.
- Final touches: taste and adjust seasoning, let rest before serving.
