Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup molasses
  • Optional: chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, and fold in the grated fresh ginger.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in any chocolate chips or nuts if desired.
  7. Scoop rounded tablespoons of dough onto the baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, until edges are firm but centers are still soft.
  9. Let cool for a few minutes before transferring to a wire rack to cool completely.

Notes

For a dairy-free version, use coconut oil instead of butter. If you don’t have molasses, honey can be used as a substitute.
