- 1/2 cup unsweetened cocoa powder
- 1 tablespoon grated fresh ginger
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup molasses
- Optional: chocolate chips or chopped nuts
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, and fold in the grated fresh ginger.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Fold in any chocolate chips or nuts if desired.
- Scoop rounded tablespoons of dough onto the baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, until edges are firm but centers are still soft.
- Let cool for a few minutes before transferring to a wire rack to cool completely.
Notes
For a dairy-free version, use coconut oil instead of butter. If you don’t have molasses, honey can be used as a substitute.
