- 6 cups mixed greens (baby spinach, kale, romaine)
- ½ cup pomegranate seeds
- 2 fresh oranges (juice and zest)
- ½ cup walnuts or pecans (lightly toasted)
- ½ cup goat cheese (crumbled; optional)
- ¼ cup olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- Salt and pepper to taste
Instructions
- In a large bowl, combine mixed greens. Rinse and dry thoroughly.
- Preheat oven to 350°F (175°C), spread nuts on a baking sheet, and toast for 8-10 minutes.
- In a small bowl or jar, whisk together orange juice, olive oil, Dijon mustard, maple syrup, salt, and pepper.
- Add toasted nuts and pomegranate seeds to the greens, drizzle with vinaigrette, and toss gently.
- Crumble goat cheese over the top and serve immediately with optional orange slices or pomegranate seeds for garnish.
Notes
For a lighter version, omit cheese. Keep the vinaigrette separate until serving to maintain crispness.
