- 1 cup Whole milk (or almond/oat milk)
- 2 teaspoons Baking powder
- 2 tablespoons Granulated sugar (or honey/agave)
- 1/4 teaspoon Salt
- 1 teaspoon Vanilla extract
- 1 tablespoon Butter (for cooking)
Instructions
- Separate the eggs into two bowls, yolks in one and whites in another.
- Mix the egg yolks with milk, flour, baking powder, sugar, and salt; whisk until combined.
- Whip the egg whites in a clean bowl until stiff peaks form, about 3-4 minutes.
- Fold the egg whites gently into the yolk mixture until just combined.
- Preheat a non-stick skillet over low heat, adding a small pat of butter.
- Pour about 1/4 cup of batter for each pancake; cover and cook for 3-4 minutes until bubbles form.
- Flip carefully and cook for another 2-3 minutes until golden brown.
- Serve warm with toppings like maple syrup, berries, or whipped cream.
