  • 1 cup Whole milk (or almond/oat milk)
  • 2 teaspoons Baking powder
  • 2 tablespoons Granulated sugar (or honey/agave)
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Butter (for cooking)

Instructions

  1. Separate the eggs into two bowls, yolks in one and whites in another.
  2. Mix the egg yolks with milk, flour, baking powder, sugar, and salt; whisk until combined.
  3. Whip the egg whites in a clean bowl until stiff peaks form, about 3-4 minutes.
  4. Fold the egg whites gently into the yolk mixture until just combined.
  5. Preheat a non-stick skillet over low heat, adding a small pat of butter.
  6. Pour about 1/4 cup of batter for each pancake; cover and cook for 3-4 minutes until bubbles form.
  7. Flip carefully and cook for another 2-3 minutes until golden brown.
  8. Serve warm with toppings like maple syrup, berries, or whipped cream.
