- 8 oz wide egg noodles or pappardelle
- 2 large yellow onions, sliced
- 2 cloves garlic, minced
- 4 cups beef broth (or vegetable broth for a lighter version)
- 2 tbsp unsalted butter
- 1 cup Gruyère cheese, grated
- 1 tsp fresh or dried thyme
- Salt and black pepper to taste
Instructions
- Sauté the onions: In a large skillet, melt a generous pat of butter over medium heat. Add your sliced onions and a pinch of salt. Cook, stirring occasionally, for about 20 minutes or until the onions are caramelized and beautifully golden brown.
- Add garlic: Toss in minced garlic and sauté for another minute, allowing the garlic to bloom and infuse the mixture.
- Deglaze the skillet: Pour in a splash of beef broth, scraping any bits stuck to the bottom of the pan to add incredible flavor.
- Mix pasta: Boil a pot of salted water and cook your pasta according to package instructions. Drain, reserving a cup of pasta water.
- Combine: Add the cooked pasta to the skillet with the onion mixture. Stir in chopped thyme and grated Gruyère until it melts into a creamy sauce, adding a bit of reserved pasta water if needed.
- Serve: Plate the pasta and finish off with more cheese on top. Broil for a few minutes if you want that ooey-gooey cheese crust.
Notes
For extra flavor, consider adding cremini or shiitake mushrooms. This dish pairs well with a light arugula salad or roasted vegetables.
