  • 2 large yellow onions, sliced
  • 2 cloves garlic, minced
  • 4 cups beef broth (or vegetable broth for a lighter version)
  • 2 tbsp unsalted butter
  • 1 cup Gruyère cheese, grated
  • 1 tsp fresh or dried thyme
  • Salt and black pepper to taste

Instructions

  1. Sauté the onions: In a large skillet, melt a generous pat of butter over medium heat. Add your sliced onions and a pinch of salt. Cook, stirring occasionally, for about 20 minutes or until the onions are caramelized and beautifully golden brown.
  2. Add garlic: Toss in minced garlic and sauté for another minute, allowing the garlic to bloom and infuse the mixture.
  3. Deglaze the skillet: Pour in a splash of beef broth, scraping any bits stuck to the bottom of the pan to add incredible flavor.
  4. Mix pasta: Boil a pot of salted water and cook your pasta according to package instructions. Drain, reserving a cup of pasta water.
  5. Combine: Add the cooked pasta to the skillet with the onion mixture. Stir in chopped thyme and grated Gruyère until it melts into a creamy sauce, adding a bit of reserved pasta water if needed.
  6. Serve: Plate the pasta and finish off with more cheese on top. Broil for a few minutes if you want that ooey-gooey cheese crust.

Notes

For extra flavor, consider adding cremini or shiitake mushrooms. This dish pairs well with a light arugula salad or roasted vegetables.
