  • 2 large yellow onions, thinly sliced
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 cup Gruyère cheese, shredded
  • 1 tsp fresh thyme
  • 4 cups beef or vegetable broth
  • 1/2 cup dry white wine (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Thinly slice the onions and mince the garlic.
  2. Caramelize the Onions: Melt butter in a large skillet over medium heat. Add onions and cook, stirring occasionally, for 15-20 minutes until golden brown.
  3. Add Garlic and Deglaze: Stir in garlic and cook for 1 minute. Add wine, if using, to deglaze the skillet and simmer for 1 minute.
  4. Add Broth: Pour in the broth, add thyme, and season with salt and pepper. Simmer on low heat.
  5. Cook the Pasta: In a separate pot, cook pasta al dente according to package instructions. Drain, reserving 1 cup of pasta water.
  6. Combine and Thicken: Add the pasta to the onion mixture, mixing gently and adding reserved pasta water as needed.
  7. Add Cheese: Stir in shredded Gruyère until melted.
  8. Serve with Garnishes: Top with extra Gruyère and fresh herbs if desired. Serve warm with toasted bread.

Notes

Patience is key when caramelizing onions. For a lighter version, omit the wine and cheese or substitute with a lighter cheese.
