A comforting pasta dish inspired by traditional French onion soup, featuring caramelized onions and melted Gruyère cheese.

- 8 oz pasta (shells or fusilli)
- 2 large yellow onions, thinly sliced
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 1 cup Gruyère cheese, shredded
- 1 tsp fresh thyme
- 4 cups beef or vegetable broth
- 1/2 cup dry white wine (optional)
- Salt and pepper to taste
Instructions
- Prepare the Ingredients: Thinly slice the onions and mince the garlic.
- Caramelize the Onions: Melt butter in a large skillet over medium heat. Add onions and cook, stirring occasionally, for 15-20 minutes until golden brown.
- Add Garlic and Deglaze: Stir in garlic and cook for 1 minute. Add wine, if using, to deglaze the skillet and simmer for 1 minute.
- Add Broth: Pour in the broth, add thyme, and season with salt and pepper. Simmer on low heat.
- Cook the Pasta: In a separate pot, cook pasta al dente according to package instructions. Drain, reserving 1 cup of pasta water.
- Combine and Thicken: Add the pasta to the onion mixture, mixing gently and adding reserved pasta water as needed.
- Add Cheese: Stir in shredded Gruyère until melted.
- Serve with Garnishes: Top with extra Gruyère and fresh herbs if desired. Serve warm with toasted bread.
Notes
Patience is key when caramelizing onions. For a lighter version, omit the wine and cheese or substitute with a lighter cheese.
