A delightful French pastry featuring ripe pears and creamy almond filling, encased in flaky puff pastry.

- 1 sheet puff pastry (store-bought or homemade)
- 3 ripe pears (Bosc or Bartlett)
- 1 cup ground almonds
- ¾ cup sugar
- ½ cup softened butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1 egg (for wash)
- Lemon juice (for pears)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel, core, and slice the pears into thin wedges, then toss them in lemon juice to prevent browning.
- In a bowl, mix the ground almonds, sugar, softened butter, eggs, and vanilla extract until smooth to make the almond cream.
- Roll out the puff pastry to about ¼ inch thick and cut into a 10-inch circle.
- Spread the almond cream on the pastry, leaving 2 inches around the edges, then layer the pears on top.
- Roll out a second sheet of puff pastry and place it on top; seal the edges and crimp with a fork.
- Cut slits in the top for steam to escape and brush with egg wash.
- Bake for 25-30 minutes until golden brown. Cool slightly before serving.
- Optionally serve warm with powdered sugar on top.
Notes
Keep the pastry cold while working. For a nut-free version, substitute almond cream with sunflower seed butter.
