Description

A delightful French pastry featuring ripe pears and creamy almond filling, encased in flaky puff pastry.


Ingredients

  • 1 sheet puff pastry (store-bought or homemade)
  • 3 ripe pears (Bosc or Bartlett)
  • 1 cup ground almonds
  • ¾ cup sugar
  • ½ cup softened butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 egg (for wash)
  • Lemon juice (for pears)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel, core, and slice the pears into thin wedges, then toss them in lemon juice to prevent browning.
  3. In a bowl, mix the ground almonds, sugar, softened butter, eggs, and vanilla extract until smooth to make the almond cream.
  4. Roll out the puff pastry to about ¼ inch thick and cut into a 10-inch circle.
  5. Spread the almond cream on the pastry, leaving 2 inches around the edges, then layer the pears on top.
  6. Roll out a second sheet of puff pastry and place it on top; seal the edges and crimp with a fork.
  7. Cut slits in the top for steam to escape and brush with egg wash.
  8. Bake for 25-30 minutes until golden brown. Cool slightly before serving.
  9. Optionally serve warm with powdered sugar on top.

Notes

Keep the pastry cold while working. For a nut-free version, substitute almond cream with sunflower seed butter.
