- 1 1/2 cups Arborio rice
- 2 cups fresh mushrooms (cremini and shiitake), sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth, warmed
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons fresh parsley or thyme, chopped
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Prep your ingredients: Chop your onions and garlic, and clean and slice your mushrooms.
- Sauté your aromatics: In a large skillet, melt butter over medium heat and add your onions. Stir until they soften. Toss in the garlic, stirring for about a minute until fragrant.
- Cook the mushrooms: Add your mushrooms to the skillet, sautéing until they release their moisture—around 5-7 minutes.
- Toast the rice: Stir in the Arborio rice until every grain is coated, about 2-3 minutes.
- Add broth gradually: Pour in a ladle of broth and stir continuously until the rice absorbs most of the liquid. Repeat this process, adding broth one ladle at a time until the rice is creamy and al dente (about 18-20 minutes).
- Finish with cheese and butter: Once the rice is cooked, stir in freshly grated Parmesan cheese and a tablespoon of butter for richness. Season with salt and pepper to taste.
- Garnish and serve: Top with fresh herbs and serve immediately.
Notes
Keep broth warm to help the rice absorb the flavors. Don’t rush the cooking process.
