Instructions

  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until fully combined.
  3. In another bowl, whisk the buttermilk, melted butter, and eggs together until smooth.
  4. Pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix—the batter should be slightly lumpy.
  5. Gently fold in the sprinkles and reserve a few to sprinkle on top.
  6. Evenly distribute the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for approximately 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow them to cool for a few minutes before transferring them to a wire rack.
