- 1 cup buttermilk
- 2 large eggs
- 1/3 cup unsalted butter, melted
- 1/2 cup multicolored sprinkles
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until fully combined.
- In another bowl, whisk the buttermilk, melted butter, and eggs together until smooth.
- Pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix—the batter should be slightly lumpy.
- Gently fold in the sprinkles and reserve a few to sprinkle on top.
- Evenly distribute the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for approximately 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow them to cool for a few minutes before transferring them to a wire rack.
- Optional: Butter them while they’re warm for an extra touch of decadence.
