- 1 whole chicken (free-range or organic)
- 4 cloves of fresh garlic, minced
- 1/2 cup unsalted butter
- 2 tablespoons fresh herbs (rosemary, thyme, or parsley)
- 2 tablespoons olive oil
- 1 lemon, halved
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels.
- Melt the butter in a saucepan over low heat and add minced garlic and fresh herbs. Infuse for 1-2 minutes.
- Rub the garlic butter mixture over the chicken, including under the skin.
- Season the chicken with salt and pepper, placing a lemon inside the cavity.
- Place the chicken in a roasting pan, breast-side up, and pour olive oil over it.
- Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.
Notes
For best results, let the chicken come to room temperature before roasting. Baste the chicken with its juices halfway through for added flavor.
