Ingredients

  • 1 whole chicken (free-range or organic)
  • 4 cloves of fresh garlic, minced
  • 1/2 cup unsalted butter
  • 2 tablespoons fresh herbs (rosemary, thyme, or parsley)
  • 2 tablespoons olive oil
  • 1 lemon, halved
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. Melt the butter in a saucepan over low heat and add minced garlic and fresh herbs. Infuse for 1-2 minutes.
  4. Rub the garlic butter mixture over the chicken, including under the skin.
  5. Season the chicken with salt and pepper, placing a lemon inside the cavity.
  6. Place the chicken in a roasting pan, breast-side up, and pour olive oil over it.
  7. Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Let the chicken rest for 10-15 minutes before carving.

Notes

For best results, let the chicken come to room temperature before roasting. Baste the chicken with its juices halfway through for added flavor.
