Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the eggplants into 1/2-inch thick rounds.
  3. Arrange the slices on a baking sheet lined with parchment paper and sprinkle salt generously. Let them sit for 30 minutes.

  5. Drizzle olive oil over one side of the eggplant slices, then press into the breadcrumb mixture on both sides.
