- 4 cloves fresh garlic, minced

- 1 teaspoon fresh thyme, chopped
- 4 tablespoons extra virgin olive oil

Instructions
- Preheat your oven to 425°F (220°C).
- Slice the eggplants into 1/2-inch thick rounds.
- Arrange the slices on a baking sheet lined with parchment paper and sprinkle salt generously. Let them sit for 30 minutes.
- In a mixing bowl, combine breadcrumbs, minced garlic, chopped herbs, and grated Parmesan (if using).
- Drizzle olive oil over one side of the eggplant slices, then press into the breadcrumb mixture on both sides.
- Place the slices back on the baking sheet, drizzle with more olive oil, and bake for 25-30 minutes until golden brown and crispy.
- Serve immediately with a zesty dipping sauce.
Notes
For extra crunch, consider using panko breadcrumbs and ensure sufficient space between slices on the baking sheet for even cooking.
