- 1 cup semisweet or dark chocolate, chopped
- 1 cup granulated sugar
- 3 large eggs
- 1 cup coconut milk
- 1 teaspoon vanilla extract
- 1/2 cup pecans, chopped
- 1/2 cup shredded coconut
- 1 pie crust (store-bought or homemade)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your pie crust and blind bake it for 10-12 minutes until golden.
- Melt the chocolate in a double boiler or microwave until smooth, then cool slightly.
- Combine the melted chocolate, sugar, and eggs in a bowl, and beat until fluffy.
- Add coconut milk and vanilla extract, mixing until creamy.
- Fold in chopped pecans and coconut.
- Pour the filling into the pre-baked crust and spread evenly.
- Bake for 30-35 minutes until the center is set but slightly jiggly.
- Cool completely in the pie pan on a wire rack.
- Top with toasted coconut and pecans.
