Description

Ingredients

  • 1 cup semisweet or dark chocolate, chopped
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans, chopped
  • 1/2 cup shredded coconut
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your pie crust and blind bake it for 10-12 minutes until golden.
  3. Melt the chocolate in a double boiler or microwave until smooth, then cool slightly.
  4. Combine the melted chocolate, sugar, and eggs in a bowl, and beat until fluffy.
  5. Add coconut milk and vanilla extract, mixing until creamy.
  6. Fold in chopped pecans and coconut.
  7. Pour the filling into the pre-baked crust and spread evenly.
  8. Bake for 30-35 minutes until the center is set but slightly jiggly.
  9. Cool completely in the pie pan on a wire rack.
  10. Top with toasted coconut and pecans.
