Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsulfured molasses
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon baking soda
  • 1/2 cup cream cheese, softened
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the flour, baking soda, cinnamon, and nutmeg in a bowl. Set aside.
  3. Cream together the softened butter and sugars in another large bowl until fluffy.
  4. Add the eggs one at a time, mixing well in between.
  5. Pour in the molasses and freshly grated ginger, stirring until incorporated.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Beat the cream cheese in a small bowl until smooth and creamy.
  8. Pour half of the batter into your greased loaf pan, dollop half of the cream cheese mixture over it, and repeat with the remaining batter and cream cheese.
  9. Using a knife, gently swirl the batter and cream cheese together for a marbled effect.
  10. Bake for 50–60 minutes until a toothpick inserted comes out clean.
  11. Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack.
  12. Slice, serve, and savor the delightful magic!

Notes

For a dairy-free option, substitute coconut oil for butter and use dairy-free cream cheese. Whole wheat flour can also be used for a heartier texture.
