- 2 cups all-purpose flour
- 1/2 cup unsulfured molasses
- 1 tablespoon fresh ginger, grated
- 1 teaspoon baking soda
- 1/2 cup cream cheese, softened
- 1/2 cup butter, softened
- 2 large eggs
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Combine the flour, baking soda, cinnamon, and nutmeg in a bowl. Set aside.
- Cream together the softened butter and sugars in another large bowl until fluffy.
- Add the eggs one at a time, mixing well in between.
- Pour in the molasses and freshly grated ginger, stirring until incorporated.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Beat the cream cheese in a small bowl until smooth and creamy.
- Pour half of the batter into your greased loaf pan, dollop half of the cream cheese mixture over it, and repeat with the remaining batter and cream cheese.
- Using a knife, gently swirl the batter and cream cheese together for a marbled effect.
- Bake for 50–60 minutes until a toothpick inserted comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack.

Notes
For a dairy-free option, substitute coconut oil for butter and use dairy-free cream cheese. Whole wheat flour can also be used for a heartier texture.
