Ingredients

  • 12 large cremini mushrooms, cleaned and stems removed
  • 1 cup gluten-free breadcrumbs
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan (or a dairy-free alternative)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, picked and chopped
  • Olive oil for drizzling
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
  3. Stir in the gluten-free breadcrumbs along with the chopped parsley and thyme. Season with salt and pepper.
  4. Spoon the filling into the mushroom caps, pressing gently to pack it in.
  5. Arrange the filled mushrooms on a baking sheet, drizzle with olive oil, and bake for about 20 minutes, or until golden and slightly crisp on top.
  6. Serve warm and enjoy the flavors!
