- 12 large cremini mushrooms, cleaned and stems removed
- 1 cup gluten-free breadcrumbs
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan (or a dairy-free alternative)
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, picked and chopped
- Olive oil for drizzling
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
- Stir in the gluten-free breadcrumbs along with the chopped parsley and thyme. Season with salt and pepper.
- Spoon the filling into the mushroom caps, pressing gently to pack it in.
- Arrange the filled mushrooms on a baking sheet, drizzle with olive oil, and bake for about 20 minutes, or until golden and slightly crisp on top.
- Serve warm and enjoy the flavors!

Feel free to substitute zucchini for mushrooms or any flavorful cheese for a different taste.
