Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix together gluten-free flour, cocoa powder, baking powder, and salt in a bowl. Set aside.
  3. Beat granulated sugar, brown sugar, and eggs in a separate bowl until frothy. Gradually combine with the dry ingredients until a thick batter forms.
  4. Chill the batter in the refrigerator for about 30 minutes.
  5. Scoop dough into equal-sized balls and roll each ball in powdered sugar.
  6. Bake for 10-12 minutes until slightly underbaked in the center.
  7. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
