- 3 large eggs
- 1 cup powdered sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix together gluten-free flour, cocoa powder, baking powder, and salt in a bowl. Set aside.
- Beat granulated sugar, brown sugar, and eggs in a separate bowl until frothy. Gradually combine with the dry ingredients until a thick batter forms.
- Chill the batter in the refrigerator for about 30 minutes.
- Scoop dough into equal-sized balls and roll each ball in powdered sugar.
- Bake for 10-12 minutes until slightly underbaked in the center.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Chilling the batter is essential for the best texture. Don’t skip rolling in powdered sugar for the characteristic crinkle effect.
