Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the almond flour, oats, baking soda, and salt.
  3. Combine wet ingredients: In another bowl, beat the eggs, then mix in the melted coconut oil (or softened butter) and sweetener of choice, along with the vanilla.
  4. Create the dough: Pour the wet ingredients into the dry ones and stir until well combined.
  5. Fold in optional mix-ins like chocolate chips or nuts.
  6. Form cookies: Scoop tablespoons of dough and place them on the prepared baking sheet, spacing them out.
  7. Bake for about 10-12 minutes or until slightly golden around the edges.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.
