- 8 oz dark chocolate (70% or higher)
- 4 large eggs
- 1 cup heavy cream
- 2 tbsp honey or maple syrup
- 1/4 tsp sea salt
- 1 tsp vanilla extract
Instructions
- Start by melting dark chocolate in a heatproof bowl over simmering water.
- Separate the egg whites and yolks into two bowls.
- Beat the egg whites until they form stiff peaks.
- Whip the heavy cream until soft peaks form.
- Fold the whipped cream into the melted chocolate gently.
- Whisk the egg yolks with honey and sea salt until creamy.
- Fold the egg yolks into the chocolate-cream blend until combined.
- Gently fold the whipped egg whites into your chocolate base.
- Spoon the mousse into serving dishes and refrigerate for at least two hours before serving.
- Serve with fresh berries or a drizzle of raspberry coulis.
