Ingredients

  • 8 oz dark chocolate (70% or higher)
  • 4 large eggs
  • 1 cup heavy cream
  • 2 tbsp honey or maple syrup
  • 1/4 tsp sea salt
  • 1 tsp vanilla extract

Instructions

  1. Start by melting dark chocolate in a heatproof bowl over simmering water.
  2. Separate the egg whites and yolks into two bowls.
  3. Beat the egg whites until they form stiff peaks.
  4. Whip the heavy cream until soft peaks form.
  5. Fold the whipped cream into the melted chocolate gently.
  6. Whisk the egg yolks with honey and sea salt until creamy.
  7. Fold the egg yolks into the chocolate-cream blend until combined.
  8. Gently fold the whipped egg whites into your chocolate base.
  9. Spoon the mousse into serving dishes and refrigerate for at least two hours before serving.
  10. Serve with fresh berries or a drizzle of raspberry coulis.
