Ingredients

  • 1 lb beef sirloin or tenderloin, sliced
  • 8 oz fresh button or cremini mushrooms, sliced
  • 1 large sweet onion, sliced
  • 3 cloves garlic, minced
  • 1 cup sour cream
  • 2 cups beef broth
  • 2 tbsp butter
  • 2 tbsp flour
  • Egg noodles or rice, for serving

Instructions

  1. Begin by slicing the beef against the grain into thin strips.
  2. Melt butter in a large skillet over medium-high heat and sauté the onions until soft.
  3. Add the garlic and mushrooms, cooking until the mushrooms are golden brown.
  4. Move vegetables to the side and add the beef to the skillet, searing until browned.
  5. Sprinkle flour over the mixture and stir well to coat.
  6. Pour in beef broth, scraping up bits from the pan, and allow to simmer until thickened.
  7. Remove from heat and gently stir in the sour cream without boiling.
  8. Serve over egg noodles or rice, garnished with parsley.

Notes

To avoid overcrowding the pan, cook beef in batches if necessary. Adjust seasoning as desired.
