  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon pure vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • Fresh strawberries or raspberries for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
  3. Mix together the sugar, eggs, and oil in another bowl until blended. Gradually add the milk and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients, stirring until just combined.
  5. Divide the batter evenly among the cupcake liners, filling them about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow them to cool completely on a wire rack.
  8. Prepare your cream cheese frosting by beating softened cream cheese with butter, sugar, and vanilla until fluffy.
  9. Frost the cooled cupcakes generously and top with fresh fruit.

Notes

Don’t rush the cooling process; frosting too soon can melt the frosting.
