Description
A refreshing summer salad featuring marinated chicken, crunchy vegetables, and a creamy tzatziki dressing, celebrating the flavors of Greek cuisine.
Ingredients
- Boneless chicken (breast or thighs)
- Full-fat Greek yogurt
- Fresh cucumber
- Minced garlic
- Fresh lemon juice
- Fresh dill
- Good quality olive oil
- Salt and pepper
- Mixed greens or grains (like quinoa)
- Cherry tomatoes (optional)
- Avocado (optional)
- Feta cheese (optional)
Instructions
- Marinate the chicken in a mixture of olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
- Cook the marinated chicken on a preheated grill or skillet over medium heat for 6-7 minutes on each side or until it reaches 165°F. Let it rest before slicing.
- Prepare the tzatziki by combining Greek yogurt, strained cucumbers, minced garlic, lemon juice, and dill in a bowl. Season with salt and pepper.
- Assemble the bowl starting with a base of mixed greens or grains, topped with sliced chicken and tzatziki. Add optional cherry tomatoes, avocado, or feta.
- Serve immediately, garnishing with fresh herbs and a wedge of lemon.
Notes
For substitutions, grilled shrimp or tofu can be used instead of chicken. Use dairy-free yogurt for a vegan option. Drain cucumbers well before adding to tzatziki to avoid excess moisture.
