Description

Delicious Greek Yogurt Pumpkin Muffins that are moist, flavorful, and perfect for fall.


Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour (or whole wheat)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease them lightly.
  2. Whisk together pumpkin puree, Greek yogurt, sugar, and eggs until smooth.
  3. Combine flour, baking powder, baking soda, salt, and spices in a separate bowl.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Scoop the batter into the prepared muffin tin, filling each cup about ¾ full.
  6. Bake for 18–20 minutes or until a toothpick inserted comes out clean.
  7. Let them cool before transferring to a wire rack.

Notes

You can add chocolate chips or nuts for a different twist.
