- 1 cup pumpkin puree
- 1 cup Greek yogurt
- 1/2 cup sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour (or whole wheat)
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease them lightly.
- Whisk together pumpkin puree, Greek yogurt, sugar, and eggs until smooth.
- Combine flour, baking powder, baking soda, salt, and spices in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Scoop the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 18–20 minutes or until a toothpick inserted comes out clean.
- Let them cool before transferring to a wire rack.
Notes
You can add chocolate chips or nuts for a different twist.
