Ingredients

  • 5 medium tomatillos, husked and rinsed
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup red onion, chopped
  • 1 jalapeño or serrano pepper, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • Optional: splash of pineapple juice or smoked paprika

Instructions

  1. Prep the tomatillos by husking and rinsing them thoroughly.
  2. Roasting is optional: preheat your broiler and roast the tomatillos for 4-5 minutes until lightly charred.
  3. Blend the tomatillos (roasted or raw) in a food processor with the cilantro, onion, garlic, jalapeño, lime juice, and salt until the desired consistency is reached.
  4. Taste the salsa and adjust seasonings as needed.
  5. Chill for about 30 minutes in the fridge to let the flavors meld.

Notes

For a smoky flavor, roast the tomatillos. Let the salsa sit to enhance the flavor.
