Ingredients

- 5 medium tomatillos, husked and rinsed
- 1/2 cup fresh cilantro, chopped
- 1/4 cup red onion, chopped
- 1 jalapeño or serrano pepper, chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh lime juice
- 1/2 teaspoon salt
- Optional: splash of pineapple juice or smoked paprika
Instructions
- Prep the tomatillos by husking and rinsing them thoroughly.
- Roasting is optional: preheat your broiler and roast the tomatillos for 4-5 minutes until lightly charred.
- Blend the tomatillos (roasted or raw) in a food processor with the cilantro, onion, garlic, jalapeño, lime juice, and salt until the desired consistency is reached.
- Taste the salsa and adjust seasonings as needed.
- Chill for about 30 minutes in the fridge to let the flavors meld.
Notes
For a smoky flavor, roast the tomatillos. Let the salsa sit to enhance the flavor.
