- 2 cloves garlic, minced

Instructions
- Prepare the veggies: Start by washing and chopping the veggies into bite-sized pieces.
- Season: Toss the chopped veggies with olive oil, salt, pepper, and your chosen herbs.
- Roast: Spread the seasoned vegetables on a baking sheet in a single layer. Roast in a preheated oven at 400°F for about 20-25 minutes.
- Prep the halloumi: Cut the halloumi into thick slices and drizzle lightly with olive oil.
- Grill: Heat a grill over medium-high heat. Grill the halloumi for 2-3 minutes on each side until golden brown.
- Make the lemon dressing: Whisk together lemon juice, minced garlic, a pinch of salt, and olive oil until emulsified.
- Combine and serve: Arrange the roasted veggies and grilled halloumi on a plate, drizzle with lemon dressing, and serve warm.
