Ingredients

  • 1/4 cup lime juice
  • Zest of 1 lime

  • 1 cup graham cracker crumbs

  • Green food coloring (optional)
  • Crushed peppermint candies (for topping, optional)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Combine crushed graham crackers with melted butter and sugar in a mixing bowl until well blended.
  3. Press the mixture into the bottoms of a lined cupcake pan to form the crusts.
  4. Beat the cream cheese in a separate bowl until light and fluffy.
  5. Gradually add sugar, sour cream, lime juice, and zest, mixing until combined.
  6. Add food coloring little by little until your desired Grinch color is achieved.
  7. Spoon the cream cheese mixture into the prepared crusts, filling each cup about three-quarters full.
  8. Bake for about 18-20 minutes, or until set but slightly jiggly in the center.
  9. Cool at room temperature for about an hour, then chill in the fridge for at least 3 hours.
  10. Top with whipped cream and festive decorations before serving.
