- 1 cup graham cracker crumbs

- Green food coloring (optional)
- Crushed peppermint candies (for topping, optional)
Instructions
- Preheat your oven to 325°F (165°C).
- Combine crushed graham crackers with melted butter and sugar in a mixing bowl until well blended.
- Press the mixture into the bottoms of a lined cupcake pan to form the crusts.
- Beat the cream cheese in a separate bowl until light and fluffy.
- Gradually add sugar, sour cream, lime juice, and zest, mixing until combined.
- Add food coloring little by little until your desired Grinch color is achieved.
- Spoon the cream cheese mixture into the prepared crusts, filling each cup about three-quarters full.
- Bake for about 18-20 minutes, or until set but slightly jiggly in the center.
- Cool at room temperature for about an hour, then chill in the fridge for at least 3 hours.
- Top with whipped cream and festive decorations before serving.
