Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a baking sheet lined with parchment paper.
- Mix the flour, shredded coconut, and a pinch of salt in a large bowl.
- Beat together the butter and sugar until light and fluffy.
- Add in the egg and vanilla extract until fully combined.
- Combine the wet and dry ingredients, mixing until just combined.
- Fold in the crushed pineapple gently.
- Shape the dough into tablespoon-sized balls and place them onto the baking sheet.
- Create a thumbprint in the center of each ball.
- Fill the thumbprints with your desired jam.
- Bake for 15-18 minutes until lightly golden.
- Cool on a wire rack before serving.
Notes
