- 1 lb ground turkey
- 1 cup diced bell peppers
- 1 can black beans, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 eggs
- Tortilla cups or corn tortillas
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat a drizzle of olive oil over medium heat. Add diced onions and sauté until softened.
- Add the ground turkey and cook until browned, breaking it up with a spoon (about 5-7 minutes).
- Stir in minced garlic, diced bell peppers, cumin, chili powder, and paprika. Cook until the peppers soften.
- Add diced tomatoes and black beans, mixing well and allowing to simmer for 5-10 minutes.
- Press tortilla pieces into a muffin tin to create cups. Optionally brush with oil.
- Spoon the turkey chili mixture into each cup, filling generously.
- Bake for 15-20 minutes until edges are crisp.
- Garnish with fresh cilantro or Greek yogurt before serving.
Notes
For added spice, include diced jalapeños in the mixture. Taste-test along the way to adjust flavors.
