A comforting and nutritious dish that combines lean ground turkey with flavorful spices, all served in crispy tortilla cups.


Ingredients

  • 1 lb ground turkey
  • 1 cup diced bell peppers
  • 1 can black beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 eggs
  • Tortilla cups or corn tortillas

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add diced onions and sauté until softened.
  3. Add the ground turkey and cook until browned, breaking it up with a spoon (about 5-7 minutes).
  4. Stir in minced garlic, diced bell peppers, cumin, chili powder, and paprika. Cook until the peppers soften.
  5. Add diced tomatoes and black beans, mixing well and allowing to simmer for 5-10 minutes.
  6. Press tortilla pieces into a muffin tin to create cups. Optionally brush with oil.
  7. Spoon the turkey chili mixture into each cup, filling generously.
  8. Bake for 15-20 minutes until edges are crisp.
  9. Garnish with fresh cilantro or Greek yogurt before serving.

Notes

For added spice, include diced jalapeños in the mixture. Taste-test along the way to adjust flavors.
