Ingredients

  • 4 Salmon fillets
  • 2 tablespoons Olive oil
  • Juice and zest of 1 Lemon
  • Fresh herbs (parsley or dill), chopped
  • 4 cloves Garlic, minced
  • 8 ounces Mushrooms (cremini or button), sliced
  • 2 cups Kale, torn
  • 1 cup Quinoa, cooked
  • 1 cup Cherry tomatoes, halved
  • 1 Avocado, chopped
  • Lemon vinaigrette (olive oil, lemon juice, honey)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lay your salmon on a greased baking sheet and season generously with salt and pepper.
  3. Drizzle with olive oil, then squeeze fresh lemon juice over the fillets.
  4. Scatter minced garlic evenly on top and add chopped herbs.
  5. Pop it in the oven for 12-15 minutes until tender and flaky.
  6. Heat oil in a skillet over medium heat for the mushrooms.
  7. Toss in sliced mushrooms and let sauté for about 5 minutes until browned.
  8. Add minced garlic and sauté for another 2-3 minutes until aromatic.
  9. Finish with a sprinkle of fresh parsley.
  10. Cook quinoa according to package instructions until fluffy.
  11. Mix torn kale with cooked quinoa, cherry tomatoes, and avocado in a large bowl.
  12. Drizzle with lemon vinaigrette and toss gently.
