Description
A comforting and creamy soup that combines tender potatoes, savory ground beef, and aromatic herbs, perfect for chilly evenings.
Ingredients
Scale
- 1 lb ground beef or turkey
- 4 medium Yukon Gold or Russet potatoes, diced
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth (or vegetable broth)
- 1 cup heavy cream (or coconut milk for a lighter option)
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp paprika
- Salt and pepper to taste
- Optional vegetables: carrots, celery, or frozen peas
Instructions
- Brown the meat: Heat a skillet over medium-high heat. Add a drizzle of olive oil, then add the ground meat. Season it with salt and pepper, breaking it apart as it cooks until browned.
- Sauté aromatics: In the same pan, add diced onions and minced garlic. Sauté until fragrant and the onions become translucent.
- Combine ingredients in the crockpot: Transfer the browned meat and aromatics into the crockpot. Add diced potatoes, broth, and herbs. Stir everything together.
- Cook low and slow: Set the crockpot to cook on low for 360 minutes or on high for 240 minutes.
- Add creaminess: About 30 minutes before serving, stir in heavy cream, letting it warm through.
- Season to taste: Once the soup is done, taste and adjust seasoning as needed.
- Serve with love: Ladle into bowls and serve hot.
