Ingredients

  • 3 cloves fresh garlic, minced
  • 1 yellow onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme
  • 2 bay leaves
  • Olive oil for sautéing
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions, carrots, and celery, cooking until softened, about 5 minutes.
  3. Toss in minced garlic and cook for another minute.
  4. Add rinsed lentils, diced tomatoes, vegetable broth, and herbs to the pot.
  5. Bring to a gentle boil, then reduce heat and cover, letting it simmer for 25 to 30 minutes.
  6. Stir occasionally and add more broth or water if needed.
  7. Season with salt, pepper, and fresh parsley before serving.
