Ingredients

- 1 cup green or brown lentils, rinsed
- 3 cloves fresh garlic, minced
- 1 yellow onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 can diced tomatoes
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon fresh thyme
- 2 bay leaves
- Olive oil for sautéing
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions, carrots, and celery, cooking until softened, about 5 minutes.
- Toss in minced garlic and cook for another minute.
- Add rinsed lentils, diced tomatoes, vegetable broth, and herbs to the pot.
- Bring to a gentle boil, then reduce heat and cover, letting it simmer for 25 to 30 minutes.
- Stir occasionally and add more broth or water if needed.
- Season with salt, pepper, and fresh parsley before serving.
Notes
Serve with crusty bread for dipping and a sprinkle of Parmesan if desired.
