  • 4 cups chicken or vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Fresh cilantro or parsley, for garnish
  • Lime juice, to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic. Sauté until the onions are translucent, about 3-4 minutes.
  2. Stir in the diced bell peppers and zucchini, mixing well for about 5 minutes until the vegetables begin to soften.
  3. Sprinkle in the cumin, chili powder, paprika, and cayenne. Mix to ensure every piece of vegetable is coated with spices.
  4. Add the drained and rinsed beans, corn, and broth. Bring the mixture to a simmer while stirring occasionally.
  5. Cover and let the soup simmer for about 20-30 minutes, allowing the flavors to meld. Stir occasionally and adjust seasoning as needed.
  6. Right before serving, stir in fresh herbs and a squeeze of lime juice for brightness.
  7. Ladle into bowls and top with extra cilantro or a dollop of sour cream if desired.
