- 4 cups chicken or vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Fresh cilantro or parsley, for garnish
- Lime juice, to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic. Sauté until the onions are translucent, about 3-4 minutes.
- Stir in the diced bell peppers and zucchini, mixing well for about 5 minutes until the vegetables begin to soften.
- Sprinkle in the cumin, chili powder, paprika, and cayenne. Mix to ensure every piece of vegetable is coated with spices.
- Add the drained and rinsed beans, corn, and broth. Bring the mixture to a simmer while stirring occasionally.
- Cover and let the soup simmer for about 20-30 minutes, allowing the flavors to meld. Stir occasionally and adjust seasoning as needed.
- Right before serving, stir in fresh herbs and a squeeze of lime juice for brightness.
- Ladle into bowls and top with extra cilantro or a dollop of sour cream if desired.
