Ingredients
- Bone-in, skin-on chicken thighs or breasts
- Cremini or button mushrooms
- Heavy cream
- Yukon Gold or russet potatoes
- Fresh garlic, minced
- Fresh thyme, rosemary, and parsley
- Sweet or yellow onions
- Butter
- Low-sodium chicken broth
Instructions
- Prep the chicken: Pat the chicken dry with paper towels, season with salt, pepper, and herbs.
- Sauté the vegetables: Melt butter in a large skillet, add chopped onions and minced garlic, and sauté until fragrant.
- Brown the chicken: Add seasoned chicken, skin-side down, brown for 5-7 minutes, then flip and brown the other side briefly.

- Finish it off: Stir in fresh herbs, taste, and adjust seasoning as needed.
- Serve: Plate the chicken and vegetables, drizzle with sauce, and garnish with parsley.
