- 3 cups fresh green beans, trimmed
- 1 cup feta cheese, crumbled
- 1/2 cup dried cranberries
- 1/2 cup walnuts, toasted
- 1/4 cup red onion, thinly sliced
- 2 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 2 tablespoons apple cider vinegar or balsamic vinegar
- Salt and pepper to taste
- Fresh herbs (parsley or thyme) for garnish
Instructions
- Wash and trim the green beans, then blanch them in boiling salted water for 3-5 minutes until bright green and crisp. Transfer them to an ice bath to cool.
- Toast the walnuts in a skillet over medium heat for 3-5 minutes until golden and fragrant.
- In a small bowl, whisk together olive oil, vinegar, minced garlic, salt, and pepper.
- In a large serving bowl, mix the blanched green beans, toasted walnuts, cranberries, feta, and red onion. Pour dressing over and toss gently.
- Garnish with fresh herbs and additional feta if desired. Serve immediately or chill for an hour.
